Fiano is an Italian varietal, originating from the Campania region in southern Italy. The hot Mediterranean summers are akin to Heathcote’s. It’s these hot climate varieties that will become more prevalent in Australia as the climate changes. Ben has made this Fiano in a more textural style similar to his Chardonnay techniques. Natural ferment, time in barrels and on gross lees until bottling.

Winemaking Notes.

Fiano is hand picked, whole bunch pressed direct to old barriques for natural fermentation.

Matured in old oak for 6 months prior to bottling.

Sulphur added in late winter, is only additive. 100% malo.

No fining or stabilisation, however lightly filtered prior to bottling.

 Tasting Notes.

Pear, citrus-lemon rind, subtle nutty aromas, somewhat saline too. Strongly flavoured and fuller bodied than most other whites, this Fiano is encased by rich flavours and waxy textures. The acidity draws the palate to great length and interest.
