Shiraz from Heathcote, can be over blown and jammy, so Ben was conscious to pull back the reins and produce a more medium to full bodied Shiraz, with spices and dark fruits that show the characters that make Heathcote an enticing Shiraz region. Natural ferment, 10% new oak, time on lees until bottling.
Winemaking Notes.
100% whole berries, tipped into a fermenter and treated like a Pinot, ie plunged once a day for 12 days, to keep bright and fresh.
After 12 days it was pressed to tank, settled and transferred to barriques.
10% new French oak
Malolactic ferment finished at xmas, hence sulphur added then.
Matured for 10 months in oak prior to bottling.
No fining or stabilisation, however lightly filtered prior to bottling.
Tasting Notes.
Deep red-purple colour, mixed spices, white pepper and five spice. Red and dark fruits, blackberries, juicy freshness and elegance, balanced by fine supportive tannins to a long finish.
