2025 by Wilimee Sangiovese (Heathcote)

A “Nuovo” style Sangiovese, (Italian for "new" or young red wine) stemming from Heathcote in central Victoria.

It is highly versatile and pairs exceptionally well with classic Italian cuisine, especially those with tomato bases or cured meats as well as pizza and antipasta, due in part to the wine's acidity and juicy notes balancing rich fats and salty flavours.

Best served with a slight chill.

Winemaking Notes.

100% whole berries, wild ferment, plunged every second day for 10 days, to keep bright and fresh.

After 10 days it was pressed to tank, settled and transferred to barriques.

Matured for 5 months in oak prior to bottling.

No fining or stabilisation, however lightly filtered prior to bottling.

 Tasting Notes: “Nuovo” style Sangiovese

Floral aromatics of violets with spice and hints of orange rind. Vibrant fruits of red cherries and raspberries on the palate, balanced by fine supportive tannins finishing bright and fresh.
