Mourvedre, otherwise know as Mataro, can be a savoury/spicy wine, so Ben’s focus was to retain freshness and bright fruits. This was achieved by natural fermentation and pressing early. 14% new oak, time on lees until bottling.
Winemaking Notes.
100% whole berries, tipped into a fermenter and treated like a Pinot, ie plunged once a day for 12 days, to keep bright and fresh.
After 12 days it was pressed to tank, settled and transferred to barriques.
14% new French oak
Malolactic ferment finished at xmas, hence sulphur added then.
Matured for 10 months in oak prior to bottling.
No fining or stabilisation, however lightly filtered prior to bottling.
Tasting Notes.
Deep red-purple colour, a medium to full bodied wine. Notes of dark fruits, meaty, violet flowers, with spice of black pepper. This Mourvedre exhibits juicy freshness and elegance, balanced by fine supportive tannins to a long finish.
